Enjiro We carefully selected ingredients that pair well with the specially made salt created for our dorayaki.
We use iodine-enriched eggs, domestically produced wheat, and Hokkaido-grown adzuki beans. We went through considerable trouble adjusting the dough to make it moist and determining the amount of salt that would best bring out the flavor and sweetness of the adzuki beans, but our desire to "deliver the best dorayaki" resulted in the creation of the best dorayaki.
The sweet bean paste is blended with chestnuts for added texture, and while it's delicious at room temperature, we recommend chilling it in the refrigerator before eating to fully appreciate the moist texture of the dough.
