How sesame oil is made

Heating and roasting
To bring out the distinctive flavor and aroma of Iwai sesame oil, the sesame seeds used as raw materials are carefully heated and roasted. Skilled craftsmen use all their senses to assess the condition of the sesame seeds, as well as the temperature and humidity of the day. The unique character of the sesame oil is also created through this roasting process, making it a step where traditional techniques truly shine.

Oil extraction
We extract the oil using a traditional pressing method that does not use organic solvents. Even though the tools may have changed, the oil extraction method itself, which preserves the rich flavor and aroma, remains the same as it was 160 years ago.

Filtration/Standing
The extracted sesame oil is roughly filtered and then left to settle in tanks for two weeks. This allows the sediment to settle, followed by a final filtration and filtration using a cartridge filter to produce a clear oil. By letting the oil rest over time rather than using an efficient centrifugal separator, the flavor and aroma are carefully preserved. This is how Iwai's amber-colored sesame oil is created.

About sesame

Sesame, which originated in the tropical savanna, was already being cultivated in the Nile River basin around 3000 BC.
It is said that sesame-based foods became widespread in Japan after the introduction of Buddhism (around 538 AD), but sesame seeds have also been found in Jomon period archaeological sites.

Sesame seeds have long been a staple of Japanese cuisine and are believed to be beneficial for beauty and health. However, Japan produces only a small amount of sesame seeds domestically, relying on imports for 99.9% of its supply.
The main production areas are countries and regions in the tropical, subtropical, and temperate zones up to 45 degrees north latitude.
There are over 3,000 varieties of sesame seeds cultivated worldwide, but they can be broadly classified into white sesame, brown sesame, black sesame, and golden sesame.
White sesame and brown sesame seeds are rich in oil and suitable for oil extraction.
Black sesame seeds have long been considered beneficial for health and vitality.
Golden sesame is a rare variety with a low yield.
Iwai's sesame oil is extracted from white, brown, and black sesame seeds.
