This rich, golden mozzarella is made from the milk of Jersey cows raised on pasture.
This creamy mozzarella cheese allows you to enjoy the flavor of seasonal milk.
Freshly squeezed milk is immediately fermented, cut to remove moisture, and then fermented again. When it develops a slight sourness, hot water is added. It is then kneaded by hand, torn into mozzarella-like pieces, and packaged.
We cherish the milky flavor and the pleasant aroma of fermentation, and we create each batch with a mix of joy and disappointment, making sure not to miss that perfect moment when the aroma is just right.
Jersey cows don't produce a large quantity of milk, but their milk has a rich flavor.
